Ginger Chicken

Serves 4

2 tablespoons coconut oil

1 onion, chopped

1 pound ground chicken

sea salt and black pepper, to taste

1 inch fresh ginger, grated

½ cup raisins

¼ cup orange juice

1 teaspoon cumin

1 teaspoon garlic powder

Add coconut oil to a large pot over medium heat.

When the oil has melted, add onion and sauté for about 3 minutes.

Add ground chicken and break the meat apart with a large spoon.

Season with salt and pepper, then sauté for another 5 minutes.

Add ginger, raisins, orange juice, cumin, and garlic powder. Mix well and cover.

Allow pot to simmer for about 5 to 10 minutes, stirring occasionally.
