3 large eggs
Salt and pepper to taste
1 tsp (4.5 g) olive oil
2 tbsp (8 g) red onions, chopped
5 cherry tomatoes, halved
5 kalamata olives, halved
2 tbsp (28 g) goat cheese
1 tbsp (2.5 g) fresh basil, chopped
1 small apple
DIRECTIONS
In a bowl, crack eggs and whisk eggs until fluffy.
In a medium skillet heat olive oil over medium heat.
Add to skillet red onions, tomatoes, and kalamata olives. Cook for 2-3 minutes then move vegetable mixture to a plate.
Add eggs to skillet and cook for 1-2 minutes, or until sides begin to lift from
the bottom. Flip eggs. Top with vegetable mixture, goat cheese, and basil.
Cook for an additional 30 seconds - 1 minute, until eggs are cooked through.
Fold in half, remove from heat, and serve with an apple
