Writer's picture: Monique ReyMonique Rey

What You'll Need

  • 1.7 lbs. (800g) sweet potatoes

  • 2 tbsp. olive oil

  • 1 tsp. paprika powder

  • 1 tsp. ground cumin

  • pinch cayenne pepper, to taste

  • 1 tsp. sea salt

  • 4 tbsp. mayonnaise

  • 2-3 tsp. sriracha sauce

Directions

1. Heat the oven to 400°F (200°C).

2. Cut the sweet potatoes into sticks 1⁄4 to 1⁄2 inch wide and 3 inches long. Toss them with the oil and spices, mixing well to ensure the sweet potato is coated.

3. Spread the sweet potato out on a baking tray lined with baking paper and place in the oven. Bake until brown and crispy, about 15 minutes, then flip and cook for a further 10 minutes.

4. Make a spicy mayonnaise dipping sauce by mixing together the mayonnaise and sriracha sauce and serve alongside the fried.
